OYAKI IN NAGANO

Do you know Oyaki (おやき)? Oyaki is Nagano prefecture’s traditional food. Especially the north area of Nagano prefecture. Oyaki is bun using flour stuffed with many kinds of ingredients. Oyaki is popular among local people as a dish, staple food, snacks.

Many kinds of ingredients are mainly vegetables made in local. Seasonal vegetables and wild vegetable seasons with Miso or soy sauce.

How to make Oyaki? It is different in each store. Oyaki has many kinds of recipe however called like same. For example “boiled Oyaki”,” baked Oyaki”,” fried Oyaki”, Fried and baked Oyaki”,” baked in ash Oyaki” and more. Especially unique is “baked in ash Oyaki”. It is boiled in ash after baked outside. Outside is hard and inside is soft. The recipe has a long history and many people loved it. But now it is difficult to buy at the store because hygienic and taking time and effort. If you find selling “baked in ash Oyaki”, you are lucky!

Next, I introduce ingredients. A popular one is “Nozawana” and “eggplant”. What is Nozawana?  Nozawana is a Japanese vegetable named from Nozawaonnsen village, most north place of Nagano prefecture. It is leaves of a turnip. Nozawana often used pickles. Probably you meet Nozawana pickles at Japanese side dish. When Nozawana used as ingredients for Oyaki, pickled or with miso.

Oyaki is vegan food

In Japan, it is difficult to find vegan food. Oyaki has attracted attention to vegan food. Oyaki’s bun used flour and water and salt or sugar as a seasoning. (Please be careful allergies, a part of shop’s Oyaki using buckwheat flour for bun).  Ingredients are basically vegetables and seasoning only. If you are worried, ask the shop staff.

The writer was work at the local Oyaki shop. Then many foreigners come to buy Oyaki. For local people, the most famous taste is Nozawana. But for foreigners, the most famous is the mushroom. Oyaki is reasonable (one is \100 to \200) and easy to eat. You should try to eat many kinds of Oyaki!
